Ingredients

Scale
  • Cake:
    • 1 1/2 cups all-purpose flour
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1/2 tsp cinnamon
    • 1/4 tsp nutmeg
    • 1/2 cup unsalted butter, softened
    • 1 cup sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • 2 cups apples, peeled and diced
    • 1 cup pecans, chopped
  • Caramel Glaze:
    • 1/4 cup unsalted butter
    • 1/2 cup brown sugar, packed
    • 2 tbsp heavy cream
    • 1/2 tsp vanilla extract

Instructions

  • Prepare Cake Batter: Preheat oven to 350°F (175°C). Grease a 9-inch baking pan. In a bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.
  • Cream Butter and Sugar: In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
  • Combine Ingredients: Gradually add dry ingredients to the butter mixture. Fold in diced apples and pecans.
  • Bake: Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick comes out clean. Cool slightly before adding glaze.
  • Make Caramel Glaze: In a saucepan, melt butter and brown sugar over medium heat. Stir in cream and vanilla; simmer for 2-3 minutes until thickened.
  • Serve: Pour glaze over warm cake, slice, and enjoy.

Notes

  • Best served warm; consider adding vanilla ice cream or whipped cream for extra indulgence.
  • Substitute walnuts for pecans if desired.
  • Glaze can be doubled for an extra-thick topping.
