  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • Season chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
  • Heat olive oil in an oven-safe skillet over medium heat. Sear chicken for 3-4 minutes per side until golden.
  • Remove chicken and set aside. In the same skillet, add sun-dried tomatoes and spinach, cooking until wilted.
  • Stir in heavy cream and Parmesan cheese, simmering for 2-3 minutes.
  • Return chicken to the skillet, spoon sauce over the top, and bake in the oven for 20-25 minutes or until chicken is fully cooked (165°F internal temperature).
  • Serve hot with the creamy sauce on top.
