  • 12 small corn tortillas (cut into quarters or halves)
  • 2 cups shredded cheddar cheese (or Mexican cheese blend, divided)
  • 1 can (15 oz) black beans (drained and rinsed, optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Sliced black olives (optional for topping)
  • Chopped cilantro or green onions (for garnish)
  • Sour cream, avocado, and salsa (for serving)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the diced onion and minced garlic to the skillet, cooking until softened. Stir in taco seasoning, cumin, chili powder, and a pinch of salt and pepper.
  4. Add the diced tomatoes with green chilies and enchilada sauce to the beef mixture. Simmer for 5 minutes.
  5. In a greased 9x13-inch baking dish, spread a thin layer of the beef mixture.
  6. Layer half of the corn tortillas over the beef mixture, followed by half of the black beans (if using) and 1 cup of shredded cheese.
  7. Add another layer of the beef mixture, tortillas, black beans, and cheese.
  8. Top with remaining cheese and optional sliced black olives.
  9. Bake for 20-25 minutes until bubbly and the cheese is melted and golden.
