Make the best beef enchiladas with tender seasoned ground beef, melted cheese, and zesty enchilada sauce wrapped in soft tortillas.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cups shredded cheddar cheese
  • 8 flour tortillas (or corn tortillas)
  • 1 can (15 oz) enchilada sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Optional: sliced jalapeños, chopped cilantro, sour cream

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef and diced onion over medium heat until browned. Drain excess grease.
  • Stir in chili powder, cumin, salt, and pepper. Mix well.
  • Spread a thin layer of enchilada sauce in the bottom of a 9x13-inch baking dish.
  • Fill each tortilla with beef mixture and a sprinkle of cheese. Roll up and place seam-side down in the dish.
  • Pour remaining enchilada sauce over tortillas and sprinkle with the rest of the cheese.
  • Bake for 20-25 minutes, until cheese is melted and bubbly.
  • Garnish with optional toppings and serve warm.

Notes

  • For added flavor, use a mix of cheddar and Monterey Jack cheese.
  • Substitute ground turkey or chicken for a leaner option.
  • Adjust spices to your heat preference.
