Beef Noodle Casserole is a classic comfort food featuring ground beef, egg noodles, sour cream, and cottage cheese, all baked with a rich tomato sauce and melted cheddar cheese.   • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes (optional)
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 cup cottage cheese (or ricotta cheese)
  • 1 tsp Italian seasoning (or a mix of dried basil, oregano, and thyme)
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 12 oz egg noodles (or any other pasta)
  • 2 cups shredded cheddar cheese (or a combination of cheeses)
  • Fresh parsley or green onions for garnish (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • Cook the egg noodles according to package instructions. Drain and set aside.
  • In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
  • Add minced garlic, tomato sauce, diced tomatoes (if using), Italian seasoning, paprika, garlic powder, salt, and pepper to the beef mixture. Simmer for 5-7 minutes.
  • In a separate bowl, mix the sour cream and cottage cheese until smooth.
  • In a greased casserole dish, layer half of the cooked noodles, followed by half of the meat sauce, and then the sour cream mixture. Repeat the layers.
  • Top the casserole with shredded cheddar cheese.
  • Bake uncovered for 20-25 minutes, or until the cheese is bubbly and golden.
  • Garnish with fresh parsley or green onions if desired.
