Ingredients

  • 3 large eggs, separated
  • ½ cup cottage cheese
  • 1 tbsp honey or sweetener of choice
  • ¼ tsp cream of tartar
  • ½ tsp vanilla extract

 

  • ⅓ cup fresh blueberries

Instructions

  • Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a clean bowl, beat egg whites and cream of tartar until stiff peaks form.
  • In another bowl, blend cottage cheese, egg yolks, honey, and vanilla extract until smooth.
  • Gently fold the egg white mixture into the cottage cheese mixture.
  • Carefully fold in the blueberries without deflating the batter.
  • Spoon batter onto the baking sheet in round shapes.
  • Bake for 25–30 minutes or until golden and set.

 

  • Let cool before serving.
