  • Bread:
    • 4 slices of crusty bread (sourdough or ciabatta), sliced about 1.5 cm thick
    • Extra virgin olive oil for brushing
    • 1 garlic clove, halved but unpeeled
  • Tomato and Basil Topping:
    • 4 ripe medium tomatoes at room temperature
    • 1/4 cup roughly chopped basil leaves
    • 1 1/2 tablespoons extra virgin olive oil
    • 1/4 teaspoon kosher or cooking salt
    • Freshly ground black pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • Brush the bread slices with olive oil and place them on a baking sheet.
  • Toast the bread in the oven for about 5-7 minutes or until golden and crispy.
  • Rub each slice of toasted bread with the cut side of the garlic clove.
  • Dice the tomatoes and mix them with the chopped basil, olive oil, salt, and pepper.
