Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 2 cups graham cracker crumbs
  • 2 cups powdered sugar
  • 1 ½ cups creamy peanut butter
  • 1 cup semisweet chocolate chips
  • ¼ cup peanut butter (for topping)

Instructions

  • In a large bowl, combine melted butter, graham cracker crumbs, powdered sugar, and 1 ½ cups peanut butter. Mix until well combined.
  • Press the mixture into the bottom of a 9x13-inch pan to form an even layer.
  • In a microwave-safe bowl, melt chocolate chips and ¼ cup peanut butter together in 30-second intervals, stirring until smooth.
  • Pour the chocolate mixture over the peanut butter layer in the pan, spreading it evenly.
  • Refrigerate for at least 1 hour or until firm. Cut into bars and serve.

Notes

For best results, use creamy peanut butter (not natural or oily varieties) to keep the bars from becoming too soft. Store Buckeye Bars in an airtight container in the refrigerator for up to one week.
