  • 12 oz smoked sausage, sliced

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp Cajun seasoning
  • ½ tsp paprika
  • ½ tsp dried thyme
  • ¼ tsp black pepper
  • ¼ tsp salt (optional)
  • ¼ tsp red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 3-4 minutes.
  • Add the diced onion and bell pepper, cooking for another 3 minutes until softened. Stir in the garlic and cook for 30 seconds.
  • Add the rice to the skillet, stirring to coat it with the flavors.
  • Pour in the chicken broth and diced tomatoes with their juice. Stir in the Cajun seasoning, paprika, thyme, black pepper, salt, and red pepper flakes.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and liquid is absorbed.
  • Remove from heat and let sit covered for 5 minutes. Fluff with a fork, garnish with green onions, and serve hot.
