Cheesy Ground Beef Quesadillas are a savory and satisfying meal, combining perfectly seasoned ground beef, gooey melted cheese, and crispy tortillas for a quick and easy dinner or snack.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 8 large flour tortillas
  • 2 tbsp vegetable oil or butter
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  • Heat a skillet over medium heat and cook the ground beef until browned. Drain any excess fat.
  • Add diced onion and minced garlic, cooking until softened. Stir in chili powder, cumin, salt, and pepper. Cook for 2-3 minutes.
  • Lay a tortilla flat, sprinkle half with cheese, and add a layer of cooked ground beef. Top with more cheese and fold the tortilla in half.
  • Heat a skillet or griddle over medium heat. Add a bit of oil or butter and cook the quesadilla for 2-3 minutes on each side until golden brown and crispy.
  • Repeat with the remaining tortillas and filling. Slice into wedges and serve warm with your favorite toppings.
