Cheesy Mashed Potato Puffs are a delicious way to use up leftover mashed potatoes. These golden, crispy puffs are loaded with cheese, eggs, and seasoning, making them a perfect snack, appetizer, or side dish. Baked to perfection, they’re irresistibly soft inside with a crunchy outer layer.

Ingredients

  • 2 cups mashed potatoes

  • 1 cup shredded cheddar cheese

  • 2 eggs

  • ¼ cup chopped green onions

  • ¼ cup grated Parmesan cheese

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ cup all-purpose flour

  • ½ teaspoon baking powder

Instructions

  • Preheat oven to 400°F (200°C) and grease a mini muffin tin.

  • In a bowl, mix mashed potatoes, cheddar cheese, eggs, green onions, Parmesan, garlic powder, salt, and pepper.

  • Add flour and baking powder, stirring until well combined.

  • Spoon mixture into the muffin tin, filling each cup about ¾ full.

  • Bake for 20-25 minutes or until golden brown and crispy on top.
