Ingredients

  • All-purpose flour
  • Almond flour
  • Butter
  • Sugar

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, beat butter and sugar until light and fluffy. Add egg yolk, vanilla extract, and almond extract, mixing until combined.
  • In a separate bowl, whisk together all-purpose flour and almond flour. Gradually add to the butter mixture until a dough forms.
  • Roll out the dough to 1/4-inch thickness and cut out rounds using a cookie cutter. Use a smaller cutter to make a window in half of the cookies.
  • Place the cookies on the prepared baking sheets and bake for 10-12 minutes, until lightly golden around the edges. Cool completely.
  • Spread cherry jam on the solid cookie rounds and top with the cut-out cookies.
  • Dust with powdered sugar before serving.
