Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1½ cups milk (divided)
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 stick (½ cup) unsalted butter (melted)
  • 1 teaspoon dried thyme (optional, for extra flavor)
  • Salt and pepper to taste
  • Chopped fresh parsley (for garnish)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a greased 9x13-inch baking dish, spread the shredded chicken evenly across the bottom.
  • In a bowl, whisk together the cream of chicken soup, chicken broth, and ½ cup of milk. Pour this mixture over the chicken.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Slowly stir in the remaining 1 cup of milk and the melted butter until a smooth batter forms.
  • Pour the batter evenly over the chicken and soup mixture. Do not stir.
  • Sprinkle dried thyme (if using), salt, and pepper over the top.
  • Bake for 40-45 minutes until the top is golden brown and the dumplings are set.
  • Garnish with chopped fresh parsley before serving.

Notes

  • For extra flavor, add cooked vegetables like peas or carrots to the chicken layer.
  • You can substitute cream of mushroom soup for a different flavor.
  • Leftovers store well and reheat easily in the microwave or oven.
