Chicken Bacon Ranch Casserole with Potatoes is a hearty, flavorful dish combining tender chicken, crispy bacon, roasted potatoes, and a creamy ranch sauce made with sour cream, cream cheese, and cheddar cheese. This easy-to-make casserole is perfect for weeknight dinners and can be customized with optional ingredients like broccoli or jalapeños.

Ingredients

  • Chicken Breasts: 1.5 lbs, boneless, skinless (cut into bite-sized pieces)
  • Russet Potatoes: 4 medium-sized, peeled and cut into 1-inch cubes
  • Bacon: 6-8 slices, cooked and crumbled
  • Ranch Seasoning Mix: 1 packet (1 oz)
  • Shredded Cheddar Cheese: 2 cups
  • Sour Cream: 1 cup
  • Cream Cheese: 4 oz, softened
  • Milk: ½ cup
  • Butter: 2 tablespoons
  • Garlic Powder: 1 teaspoon
  • Salt: 1 teaspoon
  • Black Pepper: ½ teaspoon
  • Green Onions: For garnish
    Optional:

    • Broccoli: 1 cup, steamed
    • Parmesan Cheese: ½ cup, grated
    • Jalapeños: ¼ cup, diced
    • Paprika: ½ teaspoon
    • Crushed Red Pepper: ½ teaspoon

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss the potato cubes with melted butter, garlic powder, salt, and pepper. Spread them evenly on a greased baking sheet and roast for 25-30 minutes until golden and crispy.
  • While the potatoes roast, cook the chicken pieces in a skillet over medium heat until browned and cooked through. Set aside.
  • In a large mixing bowl, combine ranch seasoning, sour cream, softened cream cheese, milk, and 1 cup of shredded cheddar cheese. Mix until smooth.
  • In a greased 9x13-inch casserole dish, layer the roasted potatoes, cooked chicken, and crumbled bacon. Pour the ranch-cheese mixture over the top, spreading it evenly.
  • Sprinkle the remaining cheddar cheese over the casserole and bake for 20-25 minutes until bubbly and golden.
  • Garnish with chopped green onions and serve. Add optional ingredients like broccoli or jalapeños for added flavor.
