  • 1 lb boneless skinless chicken thighs or breasts

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 lemon (juice and zest)

  • 1 tbsp red wine vinegar

  • 1 tsp dried oregano

  • Salt and pepper to taste

  • 2 cups cooked white or brown rice

  • 1 cup chopped cucumber

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1/2 cup feta cheese, crumbled

  • 1 cup tzatziki sauce

  • Fresh dill or parsley for garnish

Instructions

  1. In a bowl, combine olive oil, garlic, lemon juice & zest, red wine vinegar, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.

  2. Heat a skillet or grill over medium heat. Cook chicken for 5-6 minutes per side until fully cooked. Let rest before slicing.

  3. Prepare bowls with a base of cooked rice.

  4. Top with sliced chicken, cucumber, cherry tomatoes, red onion, feta, and tzatziki sauce.

  5. Garnish with fresh dill or parsley. Serve immediately.
