1 lb boneless skinless chicken thighs or breasts
2 tbsp olive oil
3 cloves garlic, minced
1 lemon (juice and zest)
1 tbsp red wine vinegar
1 tsp dried oregano
Salt and pepper to taste
2 cups cooked white or brown rice
1 cup chopped cucumber
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/2 cup feta cheese, crumbled
1 cup tzatziki sauce
Fresh dill or parsley for garnish
In a bowl, combine olive oil, garlic, lemon juice & zest, red wine vinegar, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.
