  • 2 boneless, skinless chicken breasts (sliced into thin strips or cubed)
  • 8 oz of pasta (penne, fusilli, or any short pasta of your choice)
  • 1 cup shredded mozzarella cheese (or fresh mozzarella balls)
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning (optional)
  • 1/4 teaspoon red pepper flakes (for a bit of heat)
  • Salt and pepper (to taste)
  • Fresh basil or parsley (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  • Cook the pasta according to package directions, drain, and set aside.
  • Heat olive oil in a large pan over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
  • Add the minced garlic and cook for 1 more minute until fragrant.
  • Add the chicken strips, season with salt, pepper, Italian seasoning, and red pepper flakes. Cook until the chicken is browned and fully cooked through, about 6-8 minutes.
  • Pour in the marinara sauce and simmer for 5-7 minutes to heat through.
  • Stir in the cooked pasta and mix until well-coated with the sauce.
  • Add the mozzarella cheese and stir until melted and gooey.
  • Garnish with fresh basil or parsley and serve with grated Parmesan cheese, if desired.
