  • 12 medium button mushrooms or cremini mushrooms, cleaned with stems removed and discarded
  • Olive oil spray
  • 1 box (8 ounces) cream cheese, softened
  • 1/2 cup fresh bread crumbs or panko breadcrumbs
  • 2 garlic cloves, minced
  • 1/2 tablespoon Worcestershire sauce
  • 1/2 cup finely chopped green onions
  • 1/2 cup freshly grated Parmesan cheese
  • 2-3 tablespoons fresh chopped Italian parsley
  • 1 cup cooked shelled crab, finely chopped (King Crab recommended)
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C). Lightly spray a baking sheet with olive oil.
  • Arrange the mushroom caps on the prepared baking sheet, open side up.
  • In a medium bowl, combine the cream cheese, breadcrumbs, garlic, Worcestershire sauce, green onions, Parmesan cheese, parsley, crab, salt, and pepper. Mix until well combined.
  • Fill each mushroom cap with the crab mixture, pressing it in gently.
  • Bake in the preheated oven for 20-25 minutes, until the mushrooms are tender and the filling is golden brown.
  • Serve warm, garnished with additional parsley if desired.

Notes

  • For a larger serving, use Portobello mushrooms.
  • Asiago or Gruyère can substitute Parmesan for a different flavor.
  • Gluten-free breadcrumbs can be used.
  • High-quality canned crab meat can be a good substitute for fresh crab.
  • Add 1/4 teaspoon cayenne pepper or crushed red pepper flakes for a spicy kick.
