  • 6 slices bacon, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • ½ cup pasta water (reserved)
  • 1 tbsp butter
  • ½ tsp black pepper
  • ¼ tsp salt
  • 1 tbsp chopped parsley (optional)

Instructions

  • Cook pasta according to package instructions. Reserve ½ cup of pasta water before draining.
  • In a large pan, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the grease in the pan.
  • Add butter and minced garlic to the pan, sautéing for about 30 seconds.
  • Pour in heavy cream and bring to a gentle simmer. Stir in parmesan cheese, salt, and pepper.
  • Add cooked pasta to the sauce, tossing to coat. Use reserved pasta water to adjust consistency if needed.
  • Stir in crispy bacon and mix well.
  • Garnish with parsley and extra parmesan if desired. Serve warm.

  • For a lighter version, substitute half-and-half instead of heavy cream.
