8 oz fettuccine or penne pasta
1 tbsp olive oil
2 tbsp butter
1 lb chicken breast, sliced
½ lb shrimp, peeled and deveined
1 tbsp Cajun seasoning
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 cup Parmesan cheese, grated
½ cup diced tomatoes
½ tsp paprika
½ tsp onion powder
Salt and pepper, to taste
2 tbsp chopped parsley
Red pepper flakes (optional)
Instructions
Cook pasta according to package instructions; drain and set aside.
Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
Season chicken and shrimp with Cajun seasoning. Cook chicken until golden and cooked through, about 5-7 minutes. Remove from skillet.
In the same skillet, add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
Reduce heat to medium, add remaining butter and garlic. Sauté until fragrant.
Pour in heavy cream, chicken broth, diced tomatoes, paprika, and onion powder. Simmer for 3-4 minutes.
Stir in Parmesan cheese until melted and smooth.
Add cooked pasta, chicken, and shrimp. Toss to coat in the creamy Cajun sauce.
Garnish with parsley and red pepper flakes, if desired. Serve hot.
Notes
Adjust Cajun seasoning to taste for more or less spice.
Use any pasta of choice, such as penne or linguine.
For a lighter version, substitute half-and-half for heavy cream.
