Ingredients

Scale
  • 8 oz fettuccine or penne pasta
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 lb chicken breast, sliced
  • ½ lb shrimp, peeled and deveined
  • 1 tbsp Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup Parmesan cheese, grated
  • ½ cup diced tomatoes
  • ½ tsp paprika
  • ½ tsp onion powder
  • Salt and pepper, to taste
  • 2 tbsp chopped parsley
  • Red pepper flakes (optional)

Instructions

  • Cook pasta according to package instructions; drain and set aside.
  • Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
  • Season chicken and shrimp with Cajun seasoning. Cook chicken until golden and cooked through, about 5-7 minutes. Remove from skillet.
  • In the same skillet, add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
  • Reduce heat to medium, add remaining butter and garlic. Sauté until fragrant.
  • Pour in heavy cream, chicken broth, diced tomatoes, paprika, and onion powder. Simmer for 3-4 minutes.
  • Stir in Parmesan cheese until melted and smooth.
  • Add cooked pasta, chicken, and shrimp. Toss to coat in the creamy Cajun sauce.
  • Garnish with parsley and red pepper flakes, if desired. Serve hot.

Notes

  • Adjust Cajun seasoning to taste for more or less spice.
  • Use any pasta of choice, such as penne or linguine.
  • For a lighter version, substitute half-and-half for heavy cream.
