Ingredients

Scale

For the Pumpkin Sauce:

  • 1 cup pumpkin puree (canned or homemade)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground sage
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup vegetable broth or chicken broth

For the Pasta:

  • 12 ounces pasta (penne, fettuccine, or your favorite type)
  • Salt for the pasta water
  • 2 tablespoons butter (optional, for extra richness)

Optional Garnishes:

  • Freshly grated Parmesan cheese
  • Crispy sage leaves
  • Toasted pine nuts or walnuts
  • Freshly ground black pepper

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
  • Prepare the Sauce: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add Pumpkin and Spices: Stir in the pumpkin puree, nutmeg, cinnamon, and sage. Cook for 2-3 minutes to let the flavors meld.
  • Incorporate Cream and Broth: Gradually stir in the heavy cream and broth. Bring the mixture to a simmer and cook until the sauce thickens slightly, about 5 minutes.
  • Add Parmesan and Season: Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  • Combine Pasta and Sauce: Toss the cooked pasta in the sauce until well coated. If using, stir in the butter for extra richness.
  • Serve: Serve immediately, garnished with extra Parmesan cheese, crispy sage, toasted nuts, and freshly ground black pepper, if desired.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • This dish pairs well with a side salad or garlic bread for a complete meal.
