Ingredients

  • 1 lb sirloin or ribeye steak, sliced thin

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup grated parmesan cheese

  • 1 tbsp butter

  • 8 oz fettuccine or pasta of choice

  • 1 tsp Italian seasoning

  • ½ tsp crushed red pepper flakes (optional)

  • Fresh parsley, for garnish

Instructions

  1. Cook pasta according to package instructions; reserve ½ cup pasta water.

  2. Season steak with salt and pepper.

  3. In a skillet, heat olive oil over medium-high heat. Sear steak pieces 2-3 minutes per side until browned. Remove and set aside.

  4. In the same skillet, reduce heat to medium, add butter and garlic, sauté 1 minute.

  5. Pour in cream, stir in parmesan, Italian seasoning, and red pepper flakes. Simmer until thickened.

  6. Add cooked pasta and reserved water gradually until sauce is silky.

  7. Return steak to skillet and toss to coat.

  8. Garnish with parsley and serve hot.

Notes

  • For added richness, stir in a bit of cream cheese.

  • Use leftover steak or swap for chicken/shrimp.

  • Adjust spice level with more or less red pepper.

  • Can be made gluten-free with GF pasta.
