  • 12 oz pasta (penne or rigatoni)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • ½ tsp red pepper flakes (optional)
  • ½ cup vodka
  • 1 can (28 oz) crushed tomatoes
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • Salt and black pepper, to taste
  • ¼ cup fresh basil, chopped (for garnish)

Instructions

  • Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water and drain the rest.
  • In a large skillet, heat olive oil over medium heat. Sauté onion until soft, then add garlic and red pepper flakes, cooking for another minute.
  • Pour in vodka, stir, and let it cook for 2-3 minutes until reduced.
  • Add crushed tomatoes, season with salt and pepper, and let simmer for 10 minutes.
  • Reduce heat to low, then stir in heavy cream and butter until fully combined.
  • Toss in the cooked pasta and Parmesan cheese, adding reserved pasta water as needed for consistency.
  • Serve hot, garnished with fresh basil and extra Parmesan.
