This Crock Pot Creamy Chicken Parmesan Soup is a comforting, flavor-packed dish featuring tender chicken, rich tomato broth, Parmesan cheese, and Italian seasoning. Slow-cooked to perfection, this creamy soup is easy to make and perfect for cozy nights.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup small pasta (like ditalini or elbow macaroni)

 

  • 2 tbsp butter

Instructions

  • Place chicken breasts, chicken broth, diced tomatoes, onion, garlic, Italian seasoning, salt, black pepper, and red pepper flakes in the crock pot.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender.
  • Remove the chicken, shred it with two forks, and return it to the crock pot.
  • Stir in the heavy cream, Parmesan cheese, mozzarella cheese, and butter.
  • Add the pasta and cook for an additional 20-30 minutes until the pasta is tender.

 

  • Serve warm, garnished with extra Parmesan and fresh basil if desired.

  • Use rotisserie chicken for a quicker version.
  • Substitute half-and-half for a lighter version.
  • Add spinach or kale for extra nutrients.
