Delicious Crockpot Chicken and Dumplings recipe made with tender chicken, hearty vegetables, and fluffy biscuit dumplings. Perfect comfort food for any day!

Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or thighs
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups frozen mixed vegetables (carrots, peas, and corn)
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 can (16 oz) refrigerated biscuit dough, quartered
  • 3 tbsp all-purpose flour

Instructions

  • Place chicken, chicken broth, onion, garlic, thyme, parsley, salt, and pepper into the crockpot. Cook on low for 6-7 hours or on high for 3-4 hours.
  • Shred the chicken in the crockpot using two forks.
  • Stir in heavy cream, mixed vegetables, and flour. Mix well.
  • Add quartered biscuit dough pieces on top. Cover and cook for an additional 1 hour on high, or until dumplings are cooked through.
  • Serve warm and enjoy!

Notes

  • You can use homemade biscuit dough for an extra touch.
  • For thicker soup, add an additional tablespoon of flour.
