1 ½ lbs boneless, skinless chicken breasts or thighs
4 cups chicken broth
1 cup heavy cream
2 cups frozen mixed vegetables (carrots, peas, and corn)
1 medium onion, diced
2 garlic cloves, minced
1 tsp dried thyme
1 tsp dried parsley
½ tsp black pepper
1 tsp salt
1 can (16 oz) refrigerated biscuit dough, quartered
3 tbsp all-purpose flour
Instructions
Place chicken, chicken broth, onion, garlic, thyme, parsley, salt, and pepper into the crockpot. Cook on low for 6-7 hours or on high for 3-4 hours.
Shred the chicken in the crockpot using two forks.
Stir in heavy cream, mixed vegetables, and flour. Mix well.
Add quartered biscuit dough pieces on top. Cover and cook for an additional 1 hour on high, or until dumplings are cooked through.
Serve warm and enjoy!
Notes
You can use homemade biscuit dough for an extra touch.
For thicker soup, add an additional tablespoon of flour.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
