Ingredients
Scale
1 lb beef sirloin or tenderloin, thinly sliced
2 cups mushrooms, sliced
1 medium onion, diced
2 cloves garlic, minced
2 tbsp olive oil
2 tbsp butter
2 tbsp all-purpose flour
2 cups beef broth
1 cup sour cream
1 tsp Dijon mustard
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Egg noodles or rice (for serving)
Instructions
Heat olive oil in a large skillet over medium heat. Cook the beef slices until browned, then remove and set aside.
In the same skillet, melt butter and sauté onions, garlic, and mushrooms until soft.
Sprinkle flour over the mixture, stirring well to coat. Gradually add beef broth while stirring to create a smooth sauce.
Mix in sour cream and Dijon mustard, then season with salt and pepper.
Return the cooked beef to the skillet and simmer for 5 minutes until the sauce thickens.
Serve over egg noodles or rice, garnished with parsley.
Notes
Use fresh mushrooms like cremini or white button for the best flavor.
For a lighter option, substitute Greek yogurt for sour cream.
Ensure the beef is not overcooked to keep it tender.
