This easy yellow squash casserole is a delicious Southern comfort dish made with tender squash, creamy cheese, and a crispy cracker topping.

Ingredients

  • 4 cups yellow squash, sliced
  • 1 small onion, chopped
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 cup crushed Ritz crackers
  • 2 eggs, beaten
  • ¼ cup butter, melted
  • ½ teaspoon salt

 

  • ½ teaspoon black pepper

Instructions

  • Preheat oven to 350°F (175°C). Grease a baking dish.
  • In a pan, sauté squash and onion over medium heat until tender. Drain excess moisture.
  • In a bowl, mix squash, onion, cheese, sour cream, eggs, salt, and pepper.
  • Pour mixture into the greased baking dish.
  • Mix crushed crackers with melted butter and sprinkle over the casserole.
  • Bake for 25–30 minutes or until golden brown and bubbly.

 

  • Serve warm and enjoy!

Notes

  • Add cooked bacon or ham for extra flavor.
  • Substitute Ritz crackers with breadcrumbs for a different texture.

 

  • Use Greek yogurt instead of sour cream for a lighter option.
