  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups enchilada sauce
  • 2 cups chicken broth
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can diced tomatoes with green chiles (10 oz)
  • 8 oz penne pasta (or other short pasta)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add onions and garlic, cooking until softened.
  3. Stir in enchilada sauce, chicken broth, black beans, tomatoes, chili powder, cumin, salt, and pepper.
  4. Add pasta and bring to a boil. Reduce heat, cover, and simmer for 15 minutes, stirring occasionally, until pasta is tender.
  5. Stir in cheese until melted and creamy.
  6. Garnish with fresh cilantro and serve warm.

Notes

  • You can substitute ground turkey or chicken for the beef.
