  • 8 pieces of chicken (legs and thighs)
  • 2 tbsp olive oil
  • 4 slices thick-cut bacon (diced)
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 cups mushrooms (quartered)
  • 2 large carrots (sliced)
  • 2 tbsp all-purpose flour
  • 2 cups dry red wine (Burgundy or Pinot Noir)
  • 1 cup chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper (to taste)
  • Chopped fresh parsley (garnish)

Optional Ingredients:

  • 1 tbsp tomato paste
  • Pearl onions (handful)
  • 1/4 cup cognac or brandy
  • 1 tbsp Dijon mustard
  • 1/2 tsp smoked paprika

Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a large casserole dish. Brown chicken on all sides, then set aside.
  • In the same dish, cook bacon until crisp. Add onions, garlic, mushrooms, and carrots. Sauté until softened.
  • Stir in flour and cook for 1 minute. Pour in wine and chicken broth, stirring to combine.
  • Add bay leaves, thyme, salt, and pepper. Return chicken to the pot and bring to a simmer.
  • Cover and transfer to the oven. Cook for 1.5 to 2 hours, or until chicken is tender.
  • Garnish with fresh parsley and serve.

Notes

  • For a richer flavor, add cognac or brandy after sautéing the vegetables.
  • Serve with crusty bread or mashed potatoes to soak up the sauce.
