4 boneless, skinless chicken breasts
4 medium Yukon Gold potatoes, diced
3 tbsp olive oil
4 garlic cloves, minced
1/3 cup grated Parmesan cheese
1 tsp paprika
1 tsp dried Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Heat 2 tbsp of olive oil in a large skillet over medium heat.
Season chicken breasts with paprika, Italian seasoning, salt, and pepper.
Sear the chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
Add the remaining olive oil to the skillet, then sauté the potatoes for 10-12 minutes until crispy and tender.
Stir in minced garlic and cook for 1-2 minutes until fragrant.
Return the chicken to the skillet, sprinkle with Parmesan cheese, and cover to cook for 5-7 minutes until the chicken is fully cooked.
Garnish with fresh parsley and serve hot.
Notes
Use red or baby potatoes for quicker cooking.
Add a splash of chicken broth if the skillet gets too dry.
