This Garlic Parmesan Chicken and Potatoes Skillet recipe combines juicy chicken, crispy potatoes, garlic, and parmesan for an easy, one-pan dinner packed with flavor.

  • 4 boneless, skinless chicken breasts
  • 4 medium Yukon Gold potatoes, diced
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp dried Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tbsp of olive oil in a large skillet over medium heat.
  2. Season chicken breasts with paprika, Italian seasoning, salt, and pepper.
  3. Sear the chicken for 4-5 minutes on each side until golden brown. Remove and set aside.
  4. Add the remaining olive oil to the skillet, then sauté the potatoes for 10-12 minutes until crispy and tender.
  5. Stir in minced garlic and cook for 1-2 minutes until fragrant.
  6. Return the chicken to the skillet, sprinkle with Parmesan cheese, and cover to cook for 5-7 minutes until the chicken is fully cooked.
  7. Garnish with fresh parsley and serve hot.
