Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced shallot (or onion) and sauté for 2-3 minutes until softened.
  3. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they release their moisture and begin to brown.
  5. Add the green beans to the skillet and cook for another 4-5 minutes, until tender-crisp.
  6. Season with salt and pepper to taste, and drizzle with freshly squeezed lemon juice.
  7. Optional: Garnish with fresh herbs like thyme, parsley, or rosemary for added flavor.
  8. Serve immediately as a side dish.
