  • 2 ears of corn, grilled and cut off the cob

  • 1 avocado, diced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup cilantro, chopped

  • Juice of 1 lime

  • 2 cups cooked rice (white, brown, or cauliflower)

  • Creamy Sauce:

    • 1/4 cup Greek yogurt or sour cream

    • 1 tbsp mayo

    • 1 tsp sriracha or hot sauce

    • 1 tbsp lime juice

    • Salt to taste

Instructions

  1. Prep the shrimp: Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper.

  2. Grill the shrimp: Cook on a hot grill or skillet for 2–3 minutes per side until opaque and lightly charred.

  3. Make corn salsa: Combine grilled corn, avocado, red onion, cilantro, and lime juice in a bowl. Season with salt.

  4. Prepare sauce: Mix Greek yogurt, mayo, lime juice, sriracha, and salt until smooth.

  5. Assemble the bowl: Add rice to bowls, top with grilled shrimp, corn salsa, and drizzle with creamy sauce.
