This delicious hobo casserole with ground beef is a simple, comforting dish made with layers of seasoned beef, potatoes, cheese, and a creamy soup base. Perfect for an easy family dinner!

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 small onion, diced
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter (optional)

Instructions

  • Preheat oven to 375°F (190°C). Grease a baking dish.
  • In a skillet, cook ground beef and diced onion over medium heat until beef is browned. Drain excess fat.
  • Season beef with garlic powder, onion powder, salt, and black pepper.
  • Layer half of the sliced potatoes in the baking dish. Spread half of the cooked beef mixture over the potatoes.
  • Repeat layers with remaining potatoes and beef.
  • In a bowl, whisk together cream of mushroom soup and milk. Pour evenly over casserole.
  • Cover with foil and bake for 45 minutes.
  • Remove foil, sprinkle shredded cheese on top, and bake uncovered for another 15 minutes or until potatoes are tender and cheese is melted.
  • Let sit for 5 minutes before serving.

  • Substitute cream of mushroom soup with cream of chicken for a different flavor.
  • Add vegetables like peas or carrots for extra nutrition.
  • Use ground turkey instead of beef for a lighter version.
