  • ½ cup plain Greek yogurt
  • ¼ cup milk
  • ¼ cup unsalted butter, melted
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 cup fresh or frozen blueberries (tossed in flour to prevent sinking)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a bowl, mix flour, baking powder, and salt. Set aside.
  3. In a large bowl, whisk sugar and eggs until light and fluffy.
  4. Add Greek yogurt, milk, melted butter, lemon zest, and lemon juice to the sugar-egg mixture. Mix until combined.
  5. Gradually fold in dry ingredients until just combined. Do not overmix.
  6. Carefully fold in blueberries.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
