  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 cup milk
  • 1/2 cup cream cheese
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup diced tomatoes (drained)
  • 1/4 cup diced jalapeños
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  • Cook the macaroni according to package instructions. Drain and set aside.
  • In a saucepan, melt butter over medium heat. Add flour and stir for 1-2 minutes.
  • Gradually whisk in milk until smooth. Add cream cheese and cook until melted.
  • Stir in shredded cheddar and pepper jack cheese until melted and smooth.
  • Add diced tomatoes, jalapeños, chili powder, cumin, salt, and pepper. Mix well.
  • Combine the cheese sauce with the cooked macaroni, stirring until evenly coated.
  • Garnish with fresh cilantro and serve hot.
