This dish is finished with fresh parsley and pairs beautifully with mashed potatoes, pasta, or rice, making it a comforting and flavorful meal that's easy to prepare and perfect for weeknight dinners.

Ingredients

For the Chicken:

  • Boneless, Skinless Chicken Breasts or Thighs: 4 pieces
  • Salt: 1 teaspoon
  • Black Pepper: ½ teaspoon
  • Paprika: ½ teaspoon
  • Garlic Powder: ½ teaspoon
  • Olive Oil: 2 tablespoons

For the Creamy Bacon Sauce:

  • Bacon: 6 slices, chopped
  • Garlic: 3 cloves, minced
  • Chicken Broth: 1 cup
  • Heavy Cream: 1 cup
  • Parmesan Cheese: ½ cup, grated
  • Italian Seasoning: 1 teaspoon
  • Salt and Pepper: To taste
  • Fresh Parsley: 2 tablespoons, chopped (for garnish)

For Serving:

  • Mashed Potatoes, Pasta, or Rice: To serve
  • Steamed or Sautéed Vegetables: For serving

Instructions

  • Prepare the Chicken:
    • Season the chicken breasts or thighs with salt, black pepper, paprika, and garlic powder on both sides.
    • Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.
  • Cook the Bacon:
    • In the same skillet, add the chopped bacon. Cook over medium heat until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pan.
  • Make the Creamy Sauce:
    • Add the minced garlic to the skillet with the bacon fat and sauté for 1 minute until fragrant.
    • Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Simmer for 2-3 minutes to reduce slightly.
    • Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Simmer the sauce for 5 minutes until it thickens.
    • Season the sauce with salt and pepper to taste.
  • Combine and Simmer:
    • Return the chicken and crispy bacon to the skillet, spooning the sauce over the top. Simmer for an additional 5 minutes to allow the flavors to meld.
  • Serve:
    • Garnish the dish with fresh parsley.
    • Serve the creamy bacon chicken over mashed potatoes, pasta, or rice, with steamed or sautéed vegetables on the side.

Notes

  • For a lighter option, you can use half-and-half instead of heavy cream.
  • Add a squeeze of lemon juice to the sauce for a touch of brightness.
