  • 1 lb chicken breast, cubed
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 12 oz penne pasta
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Season chicken with 1 tbsp Cajun seasoning.
  • Heat olive oil in a large pot over medium heat. Add chicken and cook until golden. Remove and set aside.
  • Add bell peppers and garlic to the pot; sauté for 2-3 minutes.
  • Stir in chicken broth, heavy cream, pasta, and remaining Cajun seasoning. Bring to a boil.
  • Reduce heat, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender.
  • Add cooked chicken back to the pot. Stir in Parmesan cheese.
  • Season with salt and pepper as needed. Garnish with parsley before serving.
