  • 2 tbsp olive oil
  • 1 lb chicken breast, diced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup spinach, chopped
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 5-7 minutes.
  • Remove the chicken and set aside. In the same pot, sauté onion and garlic until fragrant.
  • Stir in the orzo and toast lightly for 1-2 minutes.
  • Add chicken broth, tomatoes, oregano, paprika, salt, and pepper. Bring to a boil.
  • Return the chicken to the pot and reduce heat to a simmer. Cook for 10-12 minutes until the orzo is tender.
  • Stir in spinach and cook for 1-2 minutes until wilted.
  • Serve warm with Parmesan cheese on top, if desired.

  • Use boneless, skinless chicken thighs for extra juiciness.
