  • 12 oz orecchiette pasta
  • 1 lb Italian sausage, casings removed
  • 3 cups fresh spinach, washed
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook the orecchiette according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain.
  2. In a large skillet, heat olive oil over medium heat. Add the sausage, breaking it into small pieces, and cook until browned.
  3. Add garlic to the skillet and sauté until fragrant, about 1 minute.
  4. Stir in the chicken broth and simmer for 2-3 minutes.
  5. Add the spinach and cook until wilted, about 2 minutes.
  6. Toss the cooked orecchiette into the skillet, adding reserved pasta water as needed to loosen the sauce.
  7. Stir in Parmesan cheese, season with salt and pepper, and serve immediately.
