The Rachel Sandwich is a delicious variation of the classic Reuben. It swaps corned beef for turkey and sauerkraut for tangy coleslaw, paired with creamy Russian dressing, Swiss cheese, and rye bread, then grilled to golden perfection. Perfect for a satisfying lunch or dinner, this easy-to-make sandwich is packed with flavor in every bite!

Ingredients

  • 8 slices of rye bread
  • 8 slices of turkey breast
  • 4 slices of Swiss cheese
  • 1 cup coleslaw
  • 4 tbsp Russian dressing
  • 2 tbsp butter, softened

Instructions

  • Spread butter on one side of each rye bread slice.
  • On the unbuttered side of four slices, layer turkey, coleslaw, Swiss cheese, and a tablespoon of Russian dressing.
  • Place the remaining slices of bread on top, buttered side facing out.
  • Heat a skillet or griddle over medium heat and cook each sandwich for 3-4 minutes per side until golden and cheese is melted.
  • Slice in half and serve warm.

  • Substitute turkey with turkey pastrami for extra flavor.
