  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add the diced onion and garlic; sauté until translucent.
  • Add the ground beef or chicken (if using) and cook until browned. Season with salt and pepper.
  • Stir in the Rotel tomatoes and cook for 2-3 minutes to combine the flavors.
  • Pour in the heavy cream, then gradually add the shredded cheddar and mozzarella, stirring until the sauce is smooth.
