Ingredients

  • Sausages (1 lb, 450g)
  • Canned Beans (2 cans, 15 oz each; white, cannellini, or kidney)
  • Onion (1 large, finely chopped)
  • Garlic (2-3 cloves, minced)
  • Carrots (2 medium, peeled and diced)
  • Celery (2 stalks, diced)
  • Tomato Paste (2 tablespoons)
  • Diced Tomatoes (1 can, 14.5 oz)
  • Chicken Broth (1 cup, 240ml)
  • Bay Leaves (2 leaves)
  • Thyme (1 teaspoon dried or fresh sprigs)
  • Smoked Paprika (1 teaspoon)
  • Olive Oil (2 tablespoons)
  • Salt and Pepper (to taste)
  • Fresh Parsley (for garnish)

Optional Ingredients:

  • Bacon (4-5 slices, chopped)
  • Bell Pepper (1, diced)
  • Chili Flakes (a pinch)
  • Red Wine (1/2 cup, 120ml)
  • Mushrooms (1 cup, sliced)

Instructions

  • Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery. Sauté until softened.
  • Add sausages and cook until browned. Stir in tomato paste, smoked paprika, and thyme.
  • Pour in diced tomatoes, chicken broth, and bay leaves. Bring to a simmer.
  • Add beans and any optional ingredients (bacon, bell pepper, red wine, or mushrooms). Simmer for 30 minutes, stirring occasionally.
  • Season with salt and pepper to taste. Garnish with chopped parsley before serving.

Notes

  • For extra flavor, use spicy sausages or add chili flakes.
  • The casserole can be made ahead and reheated, making it ideal for meal prep.
