  • 2 large sweet potatoes, peeled and cubed

  • 4 sausages (pork, chicken, or turkey), sliced

  • 2 tbsp olive oil

  • 3 tbsp honey

  • 3 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 tsp Dijon mustard

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • Fresh parsley for garnish (optional)

Instructions

  • Preheat oven to 400°F (200°C).

  • In a bowl, mix olive oil, honey, garlic, soy sauce, Dijon mustard, paprika, salt, and black pepper.

  • Toss sweet potatoes with half the sauce and spread on a baking sheet. Bake for 15 minutes.

  • Add sliced sausages to the baking sheet, drizzle with remaining sauce, and toss.

  • Bake for another 15-20 minutes until sweet potatoes are tender and sausages are browned.

 

  • Garnish with parsley and serve hot.
