  • 1 lb smoked sausage (kielbasa, chicken sausage, or Italian sausage)
  • 1.5 lbs baby red potatoes (or russet potatoes, diced into bite-sized pieces)
  • 1 lb fresh green beans, trimmed (or frozen)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika (smoked paprika optional)
  • 1 tsp dried thyme (or Italian seasoning)
  • Salt and pepper to taste
  • 2 tbsp butter, melted (optional)
  • Fresh parsley or green onions for garnish (optional)

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, paprika, thyme, salt, and pepper.
  • Spread the potatoes evenly on a greased baking sheet and bake for 20-25 minutes, until they begin to soften.
  • While the potatoes are baking, cut the smoked sausage into 1-inch pieces and trim the green beans.
  • After 25 minutes, add the sausage and green beans to the baking sheet with the potatoes. Toss everything together and drizzle with melted butter (if using).
  • Bake for an additional 20-25 minutes, until the sausage is browned and the potatoes are crispy.
  • Garnish with fresh parsley or green onions and serve warm.
