  • 4 large bell peppers
  • 2 cups shredded chicken (cooked)
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • 1 can diced tomatoes (optional)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley or cilantro for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • Cut off the tops of the bell peppers and remove seeds.
  • Heat olive oil in a pan, sauté onions and garlic until soft.
  • Add shredded chicken, cooked rice, diced tomatoes, cumin, paprika, salt, and pepper to the pan. Stir well.
  • Stuff the peppers with the chicken and rice mixture, then top with shredded cheese.
  • Place the stuffed peppers in a baking dish, cover with foil, and bake for 25-30 minutes.
  • Remove the foil and bake for an additional 5 minutes until the cheese is bubbly and golden.
  • Garnish with fresh parsley or cilantro and serve warm.
