  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup frozen peas and carrots mix
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  • Spray the slow cooker with non-stick cooking spray.
  • Place chicken breasts at the bottom of the slow cooker and season with salt, pepper, thyme, and paprika.
  • Add the diced onion, garlic, and frozen peas and carrots on top of the chicken.
  • Pour in the chicken broth and cream of chicken soup, stirring gently to combine.
  • Rinse the rice and add it to the slow cooker, ensuring it’s submerged in the liquid.
  • Cover and cook on low for 4-6 hours, or until the chicken is cooked through and the rice is tender.
  • Shred the chicken with two forks and stir everything together. Add cheddar cheese, if desired, and let it melt.
