  • 1 lb ground turkey
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 (15 oz) can of black beans, drained and rinsed
  • 1 (15 oz) can of kidney beans, drained and rinsed
  • 1 (15 oz) can of diced tomatoes with green chilies
  • 1 (8 oz) can of tomato sauce
  • 1 cup chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • Heat olive oil in a skillet over medium heat. Sauté the diced onion and minced garlic until fragrant.
  • Add the ground turkey, cooking until browned and crumbled.
  • Transfer the turkey mixture to a slow cooker.
  • Add diced bell peppers, black beans, kidney beans, diced tomatoes with green chilies, and tomato sauce.
  • Pour in the chicken broth, then stir in chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Serve with desired toppings such as shredded cheese, sour cream, or fresh cilantro.
