This Slow Cooker White Chicken Chili is a delicious and easy recipe packed with tender chicken, white beans, and a flavorful blend of spices.   • 1 lb boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) great Northern beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cans (4 oz each) diced green chiles
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 block (8 oz) cream cheese, softened
  • 1/2 cup sour cream
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions

  • Place chicken breasts at the bottom of the slow cooker.
  • Add diced onion, minced garlic, great Northern beans, cannellini beans, corn, and diced green chiles on top.
  • Pour chicken broth over the ingredients.
  • Add cumin, chili powder, ground coriander, salt, black pepper, oregano, and cayenne pepper if using.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  • Shred the chicken with two forks directly in the slow cooker.
  • Stir in softened cream cheese and sour cream until fully incorporated.
  • Add lime juice and stir well.
  • Serve hot, garnished with chopped cilantro.

Notes

  • For a richer flavor, you can substitute chicken thighs for chicken breasts.
  • Adjust the cayenne pepper to your desired level of spiciness.
  • You can prepare this chili a day in advance; it tastes even better the next day.
