  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream

Topping Ingredients:

  • 1 cup sliced fresh peaches
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • Mint leaves for garnish (optional)

Instructions

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the prepared pan.
  • Bake crust for 10 minutes, then let cool.
  • In a large mixing bowl, beat softened cream cheese and 1 cup sugar until smooth. Add vanilla extract.
  • Beat in eggs one at a time, mixing well after each addition. Add sour cream and heavy cream, and mix until smooth.
  • Pour the cheesecake filling over the cooled crust.
  • Bake for 55-65 minutes, or until the center is set. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • For the topping, combine sliced peaches, mixed berries, 2 tablespoons sugar, and lemon juice. Stir gently to coat the fruit.
  • Once the cheesecake is chilled, spoon the fruit mixture over the top.
  • Garnish with mint leaves if desired before serving.
