For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Filling:
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
8 oz white chocolate, melted and slightly cooled
1 cup sour cream
1 tsp vanilla extract
For the Ganache:
8 oz white chocolate, finely chopped
1/2 cup heavy cream
Instructions
reheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
Crust: In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
Filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in melted white chocolate, sour cream, and vanilla extract until combined. Pour filling over the crust.
Bake for 55-60 minutes, or until the center is set. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
Ganache: Heat heavy cream in a saucepan over medium heat until simmering. Pour over chopped white chocolate and let sit for 5 minutes. Stir until smooth, then let cool slightly. Pour ganache over chilled cheesecake, spreading evenly.
Refrigerate until ganache is set. Serve chilled.
