  • 12 oz cheese tortellini
  • 4 slices of bacon (chopped)
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 cloves garlic (minced)
  • Salt and black pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  • Cook the tortellini according to package instructions, then drain and set aside.
  • In a large skillet, cook the bacon over medium heat until crispy. Remove bacon, leaving the grease.
  • Add minced garlic to the skillet and sauté until fragrant.
  • In a bowl, whisk together eggs, Parmesan, and heavy cream.
  • Return the tortellini to the skillet with garlic, then remove from heat.
  • Quickly stir in the egg mixture, tossing to coat the tortellini.
  • Add bacon back into the skillet and combine well.
  • Season with salt and pepper, garnish with parsley, and serve immediately.

Notes

  • Be sure to remove the skillet from heat before adding the egg mixture to avoid scrambling the eggs.
